Chocolate Cooper

Ingredients:

6oz. Butter / Margarine
2 Table spoons Golden syrup
2 Dessert spoon white sugar
6oz. dried fruit ( currants and raisins)
4.5 Desserts spoons drinking chocolate
0.75 lb. plain biscuits ( Digestive pref.), crushed
200g. Cooking chocolate

Some Brandy (0ptional)


Method:

Put all ingredients except biscuit and cooking chocolate into a small saucepan, heat until butter / margarine and syrup has melted.

Stir in crushed biscuit and place in a shallow baking tray lined with greaseproof paper.

Melt cooking chocolate and spread over mixture.

Place in 'fridge to set.

 

Optional extra: Put some Brandy in with the chocolate used for the topping.

Don't use too much otherwise the chocolate won't set. (Drink any excess!)
